Linen at 150–200 GSM, or a tight flat-weave cotton, 50 × 70 cm. Terry at 300–400 GSM lints onto glasses. Softener makes any of them worse.

Weave, not “kitchen” on the label
Linen flax has longer, smoother fibres and a plain or twill weave that does not shed loops. 150–200 GSM is thin, dries fast, and gets better after 10 washes. Cotton glass cloth (often a dimple or tight terry with almost no pile) is the pub standard. Bath terry is a lint factory on stemware.
A 50 × 70 cm linen rectangle hangs on a 40 cm oven rail without pooling on a wood board. Bigger is not better; wet mass is the enemy.

Wash them like work cloth, not spa towels

Keep them off the knife and the chicken
One towel for hands, one for dishes, or you are spreading what was on the chef’s knife. Dark linen hides stains and still needs the 60C. When the hem is gone and the middle is gauze, they become rags. Do not promote a rag back to glasses.

- Why do new linen towels still lint?
- Short fibres from milling. Wash three times. If they still pill, it is short-staple cotton labelled as linen. Feel: linen is cooler and slightly slubby, not peach-fuzzy.
- Can I use a bath hand towel in the kitchen?
- For a floor spill. Not for glasses, not for a hot pan handle you then put on a white shirt.
- How many is enough?
- Four linen or glass cloths per working kitchen. Twelve terry bar mops if you fry a lot and accept they are mops.
