Same chemistry, different mass

Cast iron is poured, thick, and full of microscopic texture. Carbon steel is rolled sheet, usually 2–3 mm, smoother, and maybe half the weight in the same diameter. Heat a 12-inch carbon-steel skillet and it is ready in a couple of minutes on gas. The same diameter in cast iron needs patience and then forgives you when you add food.

Start with a 10.25-inch skillet if you only buy one iron pan. Add carbon steel when you want a second, livelier surface for eggs and stir-fries.

Seasoning, rust, and the $40–$120 band

Both want whisper-thin oil baked past the smoke point. Carbon steel’s smooth face shows every missed dry-off as orange rust; that is cosmetic if you scrub and oil. Blue-steel or pre-seasoned carbon pans skip a step. Stainless-clad is a different tool for fond and acid.

What not to expect

Neither pan is a dishwasher object. Neither replaces a 3-ply stainless saucepan for wine sauce. Carbon steel is the move if cast iron’s weight is why you do not cook. It is not “easier” if you leave it wet in the sink.

Can carbon steel go in the oven?
Yes, including the handle on classic French pans (it gets hot). Plastic-handled tourist pans cannot.
Which is more nonstick?
A well-seasoned smooth carbon-steel pan usually releases eggs sooner than as-cast iron. After six months of use they converge if you do not soak them.
De Buyer Mineral B or Lodge?
Mineral B if you want carbon steel. Lodge if you want cast iron. They are not substitutes; they are neighbours.
