Cast Iron vs Stainless Steel: Which Pan Should You Buy First?
Stainless if you cook tomatoes and want fond. Cast iron if you sear steaks and will season it. The first pan is 26–28 cm. The twelfth pan is a storage problem.

What each metal is for
Cast iron is a heat battery. A 4–5 mm floor holds a sear after you drop a cold steak on it. It hates long acid baths, dishwashers, and soaking. Seasoning is polymerized oil, not a coating you order in a colour. Stainless — real tri-ply or 5-ply, not a disc-base supermarket pan — is a fond machine. You can deglaze with wine, simmer tomato for 40 minutes, and scrub it with a powder. It will stick if you do not preheat; that is a technique problem covered in why stainless steel food sticks, not a reason to fear the metal.
Carbon steel sits between them: 2–3 mm, 1.5–2 kg in a 28 cm pan, seasons like iron, heats and cools faster. It is the second or third pan, after you know which failure you hate more — rust or stuck eggs.

Buy stainless if your food is wet and sharp
If dinner is a pan sauce, a braise, or anything you would deglaze, stainless is the first pan. Look for 18/10 (304) interior, an aluminium or copper core that runs up the walls, and a lid. A 3-quart sauté does more weeknights than a 12-inch frypan. Skip 1-ply disc-base pans that scorch a ring and stay cold at the rim.
Buy cast iron if your food is dry and loud

Questions, answered
- Can one pan do everything?
- A 28 cm stainless sauté plus a lid does 80% of stove cooking. Iron does the 20% that is a hard sear. “Everything” is how you own nine pans and still scramble eggs in the wrong one.
- Is nonstick the actual first pan?
- Only for eggs and fish you are not willing to manage. It is a 2–3 year object. Stainless and iron are the decade pans. If budget is one pan, stainless.
- What size if I cook for two?
- 26 cm. 30 cm is for four, and it does not heat evenly on a 18 cm domestic burner.
