Which face of the tree hits the knife

Edge grain: long strips, the long side of the fibres facing up, like a tabletop. End grain: short blocks, fibre ends facing up, like a butcher block. The knife wedges fibres apart on end grain instead of slicing them along their length. That is the self-heal. It is also more glue surface and more chances to fail if you dishwasher it (never).

Weight, thickness, oil

End grain wants 1.5–2.5 inches or it warps. Edge grain can live at 1.25 inches. Food-grade mineral oil or a beeswax blend, when the board looks pale. Not olive oil (it goes rancid). Not leftover pan fat.

A good edge-grain board beats a neglected end-grain

If you will not oil, buy plastic for meat and a cheap edge-grain you treat as semi-disposable, or actually oil the cheap edge-grain. End grain as a wedding gift that lives in a drawer is a $180 trivet. Use it, dry it on its side, oil it monthly in a dry house.

Questions, answered

Does end grain never dull a knife?
It dulls slower. You still hone. You still keep glass off the counter.
Walnut or maple?
Maple is harder and the commercial default. Walnut is a bit kinder and shows cuts less. Both work in either grain.
Can I put end grain in the dishwasher?
No. Glue lines open, the board cups, and you own expensive kindling.
