How to Clean Stainless Steel Pans

Soak the fond, then a non-scratch pad. Rainbow heat tint and brown spots take an oxalic-acid powder. Do not punish 18/10 with a coarse wheel because eggs stuck — that was preheat.

How to Clean Stainless Steel Pans — still life for this Home guide on Nonchallant

Fond is not burnt-on failure

Brown bits after a sear are dissolved with wine, stock, or water while the pan is still hot. That is sauce. What is left after a soak is residue. A plastic scraper, then a sponge. If you attacked it dry with a coarse pad, you already put 0.1 mm scratches in 18/10 that will stain faster next time.

Rainbow yellow-blue on the floor is heat tint, an oxide. It is not dirt. A mild acid powder lifts it. So does a 1:1 vinegar simmer for a few minutes, then a wash — similar chemistry to descaling a kettle.

The powder, the pad, the things you skip

Oxalic-acid cleanser: wet pan, sprinkle, paste, wait under a minute, wipe, rinse well. Gloves if you have cracks in your hands. Cream versions work; they are slower. Baking soda paste is milder and good for light film.

Daily: wash like a pan, not like iron

Soap is allowed. Dishwasher is allowed on most tri-ply and still dulls the outside over a year. Dry it if you have hard water spots. This is the opposite of cast iron, and that is the point of owning stainless.

Questions, answered

Is Bar Keepers Friend safe on tri-ply?
On the stainless interior, yes, as a short paste, then rinse. Do not leave it to dry into a crust. Do not use it as a daily soap.
The base is warped after high heat. Can cleaning fix that?
No. Warping is metal. Cleaning is surface. Preheat more gently; a dead-flat 3 mm disc is cheaper to replace than to pray at.
Salt pits in the floor?
Do not dump salt into cold water and leave it. Add salt when water boils, or to food, not as a soak. Pits are permanent; the pan still cooks.
