How to Season Carbon Steel So It Behaves Like Iron
Same chemistry as cast iron: whisper-thin oil, past the smoke point, 3–6 coats. The pan is 2–3 mm and 1.5–2 kg, so it heats faster and forgives less neglect.

Strip the wax, then build a film
New carbon steel is grey and greasy with a rust preventative. Wash with hot water and soap, scrub, dry on medium heat until every bead is gone. The first colour toward blue-brown is oxide plus the start of polymerized oil. That is good. Bare silver after a cook is not.
Oil: grapeseed or canola, a few drops, wiped as if you were trying to remove it. Thick oil becomes a sticky plaque that flakes. Oven at 230–260C for 45–60 minutes, or hob until it smokes and you move the pan to even the colour. Three coats minimum before you trust eggs.

Daily: wipe, dry, micro-coat
Cook, wipe, drop of soap if you need it, dry on the burner, smear of oil, heat until it just shimmers. Acid is the same warning as iron: a tomato pan sauce is allowed; a 40-minute simmer will thin a young film. Restore as in cleaning cast iron after acid. Never dishwasher, never soak.
What it does not replace
Stainless still wins long acid and dishwasher-adjacent life. Iron still wins heat-battery searing of a thick steak. Carbon steel wins stir-fry, omelettes, and a 28 cm pan you can toss with a 20 cm chef’s knife on the board next to it. One well-seasoned carbon-steel skillet is a tool. Three is a wall.
Questions, answered
- Flax on carbon steel?
- Same as iron: hard film, flakes if thick. Grapeseed is the default. Flax only if you wipe it to nothing.
- The pan turned blotchy blue.
- Heat was uneven. Keep cooking. Blotch evens with oil and time. Strip only if it is sticky or rusty.
- Can I season it like a wok with oil-on-fire?
- You can on a hob that can take it. For a flat skillet, oven coats are more even and less theatrical.
