How to Store Knives So the Edges Last

A 40–45 cm magnetic strip, a dry block, or a saya. Not a jumble in a drawer. The edge of a 20 cm chef’s knife is a 15–20° bevel you can ruin in one rattle.

How to Store Knives So the Edges Last — still life for this Home guide on Nonchallant

Strip, block, or sheath

Magnetic strip: blades up, spine against the magnet first so you do not drag the edge. Mount it 5–10 cm out of hip-check range, not over a sink where they drip. 40–45 cm holds the trio plus a steel. Wood or metal bar; cheap plated strips that slide are worse than a block.

Block: only if it is dry and you empty it to wash the slots twice a year. Horizontal in-drawer trays: good if the edges sit in slots, not a shared well. Saya or a plastic edge-guard for a 20 cm gyuto in a drawer. Leather rolls are for transport.

Wet storage is rust and microbes

Hand wash, dry, then park. A carbon-steel 20 cm chef’s knife will rust in a damp block overnight. Even stainless pits in a closed wet slot. The board you cut on matters too: a scarred plastic board holds more than a maintained wood one — plastic vs wood.

Put the steel where you will use it

A 25–30 cm honing steel on the same strip as the chef’s knife is how honing actually happens twice a week. In a drawer under the tea towels, it will not. Choice of steel: how to choose a honing steel.

Questions, answered

Will a magnet ruin the temper?
No. Kitchen magnets are not an MRI. Dragging the edge across the bar will ruin the bevel. Spine first.
Is a knife block a bacteria farm?
A wet, crumby block is. A dry one you empty and wash is not. If you never remove the knives, it is a farm.
Dishwasher magazine rack as storage?
No. Dishwashers are where edges die. Storage is dry and still.
