What the lab said, what your sink does

Wood can pull moisture and some bacteria into the fibre, where they die as the board dries. Plastic stays on the surface until you wash it — or until the surface is a network of cuts you cannot wash. Home practice beats material mythology: hot soapy water, stand to dry, no meat juice left in a puddle for an hour.

Colour-coded plastic (red meat, green veg) is useful if you will actually keep the code. One 40 × 30 cm maple plus a cheap plastic for raw chicken is a saner pair than five scarred flexible mats.

Raw meat is a wash, not a material

Board, knife, hands, the pan, in that order. A wood board used for chicken needs soap and a dry stand, not a ritual bleach bath that raises the grain. A 1:10 bleach dip is for a plastic board you will not throw away yet. Do not soak wood.

Thickness is the other hygiene spec

A 1 cm board warps into a bowl that holds juice. 3–4 cm of maple stays flat, sits still, and can be planed in five years. Rubber feet help. Store it on edge, not wet under the knives in knife storage.

Questions, answered

Bamboo boards?
Hard on edges, often glue-heavy, thin. Acceptable as a cheap extra. Not the decade board.
Glass or marble?
They wreck a 15–20° edge in a week. Use them as cheese plates.
Is wood illegal in commercial kitchens?
Many codes prefer plastic because it can go in a machine. That is logistics, not proof that your maple board is unsafe at home.
