Why three, not twelve

Each extra knife is a blade that dulls in a drawer. A chef’s knife does 90% of cutting. A paring knife does in-hand work the chef’s knife is too long for. A serrated knife saws tomatoes and bread without crushing. Utility knives, boning knives, and santokus are specializations. Buy them when a task repeats weekly, not because they came in the block.

What to pay

Stamped Victorinox Fibrox is the knife professional kitchens actually replace without crying. Forged German (Wüsthof, Zwilling) in the $120–$180 range is the heirloom version of the same shape. Japanese stainless gyutos are thinner and happier on vegetables; they hate bones and dishwashers. Ceramic looks sharp and chips. The same “pay for the core job” logic as one pan you season beats a gadget wall.

Care is a steel, not a block

Hand wash, dry, magnetic strip or a Saya. A wooden block is fine if it is clean and dry. Pull-through cheap sharpeners chew German edges. A $20 whetstone and a 15–20° angle, twice a year, is enough. Honing steel between sessions. Never the dishwasher — the same rule as anything you actually wanted to last.

Questions, answered

Santoku instead of a chef’s knife?
If you have small hands and mostly cut vegetables, yes. It is a shorter, flatter chef’s knife, not a fourth knife.
Do I need steak knives?
If your dinner knife is dull. A sharp chef’s knife plates steak at the board and you can eat with ordinary cutlery.
Carbon steel or stainless?
Carbon takes a keener edge and rusts if you treat it like stainless. Stainless is the default for a first set.
