Why Food Sticks to Stainless Steel (and How to Stop It)
Stainless is not nonstick. Food sticks when the pan is too cold, too empty of fat, or crowded. Preheat 2–3 minutes, oil, wait for a fluid shimmer, then the protein.

Temperature is the coating
At the Leidenfrost point, a water droplet films on its own vapour and slides. That is hot enough for oil, then for a dry-ish protein. Below that, egg albumin glues to nickel-chrome. Above that on empty steel, you burn oil into a brown varnish you will be scraping in the next guide.
Medium, 2–3 minutes, on a burner that matches the base. A 28 cm pan on a 14 cm ring has a cold rim and a stuck ring of chicken. Preheat empty, then oil — oil first on a screaming pan is smoke; oil first on a cold pan is a soak.
Fat, moisture, and crowding
A film of oil 1–2 ml for a steak in 26 cm; more for eggs. Pat protein dry. Two chicken thighs are a sear; five are a steam. If it will not release after 3 minutes, it is not ready — wait, do not scrape the surface off the cut.

When to use the other pan instead
Daily eggs you want to slide: carbon steel with a film (season carbon steel) or iron, or a cheap nonstick you will replace. Stainless for the pan sauce after the steak. The stick is information. It is not a character flaw in 18/10.
Questions, answered
- Can I season stainless like iron?
- You can polymerize oil onto it; it will not bond the same way and the first deglaze will strip it. Preheat and fat, not a fake seasoning.
- Water-drop test vs infrared thermometer?
- The drop is enough at home. If you own a thermometer, 180–200C at the floor is a typical sear band for stainless. Eggs want less.
- Why does restaurant stainless not stick?
- Heat, fat, dry protein, and they do not crowd. Also they own a 5 kW burner. Your job is the first three.
